DARDANEL JUMBO SHRIMP AND SALMON PEARL COUSCOUS PILAF

Ingredients:

200g Dardanel Jumbo Shrimp

200g Dardanel Salmon Fillet

2 tablespoons olive oil

½ onion, diced

4 cloves garlic, minced

1 tomato, diced

300g pearl couscous

A pinch of salt

A pinch of black pepper

1 tablespoon cream

2 cups water

½ cup grated parmesan cheese

4 sprigs parsley

Instructions:

1. Heat olive oil in a pot. Add diced onion and minced garlic, sauté until golden brown.
2. Add pearl couscous and sauté until it changes color.
3. Once the couscous is nicely toasted, add diced tomato, salt, and black pepper. Stir well.
4. Pour in water and bring it to a boil. Reduce the heat and let it simmer for about 8 minutes until the couscous is cooked.
5. While the couscous is cooking, cube the salmon fillet. Heat olive oil in a pan, then add shrimp and salmon cubes. Sauté briefly.
6. Add the shrimp and salmon mixture to the couscous. Cover and let it cook for another 8 minutes until the shrimp and salmon are cooked through.
7. Once cooked, remove from heat. Stir in cream and grated parmesan cheese. Let it rest for 5 minutes.
